Chicken And Herbs In White Wine Recipe

Ingredients
  • 1 (10.5 oz) can chicken broth
  • 1 (4 lb) chicken, cut into pieces
  • 1/2 tsp dried basil
  • garlic powder to taste
  • 1/2 tsp dried oregano
  • 2 tbsps olive oil
  • 1/2 lb fresh mushrooms, sliced
  • 1/4 tsp black pepper
  • 1 c dry white wine
  • 1 large onion, sliced
  • 1/2 tsp dried thyme
  • 1 tsp garlic salt
  • 1 tsp poultry seasoning
  • 1/2 tsp dried rosemary

Directions
  • Step #1 Heat olive oil in a large Dutch oven over med-heat/flame.
  • Step #2 Sprinkle top chicken with garlic powder, & brown on both sides.
  • Step #3 Remove chicken to paper towels.
  • Step #4 Spoon off chicken fat, & return pan to stove.
  • Step #5 Stir in mushrooms & onions; cook, stirring every once in awhile, until onions are soft.
  • Step #6 Remove to a medium bowl.
  • Step #7 In a separate bowl, oregano, rosemary, mix together basil, & thyme.
  • Step #8 Spice up with garlic salt, pepper, & poultry seasoning.
  • Step #9 Stir in wine, & add to onion & mushrooms.
  • Step #10 Return chicken to Dutch oven.
  • Step #11 Pour mushroom mixture & broth over chicken; cover, & cook over low heat/flame until meat begins to fall off the bone, about 1 1/2 hrs.
