Betsy's Quick & Easy Artichoke Dip Recipe

Ingredients
  • 1 small garlic clove (minced) .
  • 1/2 c of shredded mozzarella cheese .
  • 1 (14 oz) can artichoke hearts or artichoke bottoms (packed in water, not oil) .
  • salt & pepper .
  • 1/2 c mayonnaise .
  • 1 c of shredded parmesan cheese (fresh, not canned)

Directions
  • Step #1 Drain the artichokes from the can.
  • Step #2 Coarsely chop them.
  • Step #3 Combine sliced chokes, mayo, cheeses, & garlic in a small oven-proof serving dish.
  • Step #4 Add fresh ground pepper & salt to taste.
  • Step #5 Bake in oven at 375 - 400F until melted.
  • Step #6 To be served next day, just re-heat in microwave.
  • Step #7 Recipe can be doubled.
