Ingredients
Cake .
1/2 c unsweetened cocoa (not Dutch process) .
3 large eggs .
2 1/2 tsps white vinegar .
1 1/2 c confectioners' sugar, sifted .
2 c heavy cream, cold .
1 1/2 tsps vanilla .
1 1/2 tsps salt .
6 tbsps red food coloring .
1 tbsp unsalted butter .
1/2 tsp vanilla .
Icing .
2 tsps baking soda .
1 1/4 c buttermilk .
2 1/4 c granulated sugar .
3 1/2 c cake flour .
2 c canola oil .
12 oz mascarpone .
12 oz cream cheese, at about room temp
Directions
Step #1 For the cake:.
Step #2 Preheat oven to 350 degrees.
Step #3 Place tsp of butter in each of 3 round 9-inch layer cake pans & place pans in oven for a few mins until butter melts.
Step #4 Remove pans from oven, brush interior bottom & sides of each with butter & line bottoms with parchment.
Step #5 Whisk cake flour, cocoa & salt in a bowl.
Step #6 Place oil & sugar in bowl of an electric mixer & beat at medium speed until well-mixed.
Step #7 Beat in eggs one at a time.
Step #8 With machine on low, very slowly add red food coloring.
Step #9 (Take care: it may splash.
Step #10 ) Add vanilla.
Step #11 Add flour mixture alternately with buttermilk in two batches.
Step #12 Scrape down bowl & beat just long enough to mix.
Step #13 Place baking soda in a small dish, stir in the vinegar & add to batter with machine running.
Step #14 Beat for 10 seconds.
Step #15 Divide batter among pans, place this in oven & bake this until a cake tester comes out clean, 40 to 45 mins.
Step #16 Let cool in pans 20 mins.
Step #17 Then remove this from pans, flip layers over & peel off parchment.
Step #18 Cool completely before frosting.
Step #19 For the icing:.
Step #20 Softly whip cream by hand, in electric mixer or in food processor/blender.
Step #21 Cover up in bowl & put in the fridge.
Step #22 Blend cream cheese & mascarpone in food processor/blender or electric mixer until smooth.
Step #23 Add vanilla, pulse briefly, & add confectioners’ sugar.
Step #24 Blend well.
Step #25 Transfer cream cheese mixture to bowl; fold in whipped cream.
Step #26 Refrigerate until needed.
