Peas And Feta Puffs Recipe

Ingredients
  • 1 oz feta cheese .
  • 1 3/4 oz large peas .
  • 1 sheet puff pastry .
  • 1 egg yolk .
  • 1 organic lemon .
  • 4 slices pancetta .
  • 1 sprig fresh mint

Directions
  • Step #1 Zest the lemon.
  • Step #2 Crumble the feta, & mix with the lemon zest.
  • Step #3 Cut the pancetta into thin slices.
  • Step #4 Clean the mint, dry it & remove the leaves.
  • Step #5 Clean & dry the large size peas.
  • Step #6 Roll out the puff pastry, & cut out 6 circles that are 3 1/2" to 4" wide.
  • Step #7 Put cooking paper on a baking tray, or use a silicone sheet, & put the pastry circles onto it.
  • Step #8 On each circle, put 2 or 3 big peas on one half only.
  • Step #9 Sprinkle top some pancetta slices on this, then some feta.
  • Step #10 Put a couple of mint leaves onto this.
  • Step #11 Fold the empty half of the circle onto the other side, making a half circle, or half moon shape.
  • Step #12 Seal the edges, pinching with your fingers, or press down using a fork.
  • Step #13 Scramble the egg yolk, & then brush egg yolk onto the surface of each half circle.
  • Step #14 Bake for 20 mins at 350F, or until browned.
