Easy Mexican Chicken/black Bean Soup Recipe

Ingredients
  • 1/2 c sliced onions .
  • 1 (15 oz) can black beans .
  • 1 c monterey jack cheese, shredded (garnish) .
  • tortilla chips (garnish) .
  • 1/2 c sliced cilantro .
  • 1 tsp salt (optional) .
  • 1/2 c sliced cilantro (for garnish) .
  • 1 c uncooked instant rice .
  • 1 tsp pepper .
  • 1/2 c sliced red bell peppers .
  • 1 lime, quartered (for garnish) .
  • 2 c cubed cooked chicken (rotisserie style works great) .
  • 3 (14 1/2 oz) cans chicken broth .
  • 1 tsp garlic salt .
  • 1 lime, juice of .
  • 1 1/2 c thick & chunky salsa .
  • 1 avocado (garnish)

Directions
  • Step #1 In large pot, bring salsa & broth to a boil.
  • Step #2 Add cooked chicken, beans, bell pepper, 1/2 c cilantro, onion, spices & uncooked instant rice.
  • Step #3 Cover up, reduce heat & let simmer 4-5 mins.
  • Step #4 Remove from heat, add juice from one lime.
  • Step #5 Offer shredded cheese, lime quarters, sliced cilantro & cubed avocado as garnishes.
  • Step #6 Serve with tortilla chips.
