Fried Catfish Recipe

Ingredients
  • 1 c self-rising flour .
  • 1 c self-rising cornmeal .
  • 1/2 tsp salt .
  • 1/4 c bacon drippings or shortening .
  • 6 medium catfish, cleaned & dressed .
  • 1/4 tsp pepper .
  • hot sauce (optional)

Directions
  • Step #1 Sprinkle top catfish on both sides with salt & pepper; if desired, douse with hot sauce.
  • Step #2 Let stand at about room temp 10 mins.
  • Step #3 Combine flour & cornmeal & dredge catfish in mixture.
  • Step #4 Fry in hot bacon drippings about 8 to 10 mins, turning once, or until golden brown on both sides.
