Chocolate Caramel Thumbprint Cookies Recipe

Ingredients
  • 1/2 c semi-sweet chocolate chips .
  • Drizzle .
  • 1 c flour .
  • 1/4 tsp salt .
  • 12-14 caramel candies .
  • 1 tsp vanilla extract .
  • 3 tbsps heavy whipping cream .
  • 1/3 c baking cocoa .
  • 1/2 c butter, softened (no substitutes) .
  • Filling .
  • 2/3 c sugar .
  • 1 egg, separated .
  • 1 tsp shortening .
  • 2 tbsps milk .
  • 1 c sliced pecans

Directions
  • Step #1 In a mixing bowl cream butter & sugar.
  • Step #2 Beat in egg yolk, vanilla, & milk.
  • Step #3 Combine flour, cocoa, & salt; add to creamed mixture.
  • Step #4 Refrigerate 1 hr or until easy to handle.
  • Step #5 Roll dough into 1 inch balls.
  • Step #6 Beat egg white.
  • Step #7 Dip balls into egg white & roll in the nuts.
  • Step #8 Place 2 inches apart on greased cookie sheets.
  • Step #9 Make a 3/8 - 1/2 inch indentation in the center of each ball with the end of a wooden spoon (or your thumb!).
  • Step #10 Bake at 350 for 10-12 mins.
  • Step #11 Remove to cool on wire racks.
  • Step #12 In a heavy saucepan, melt caramels with cream over low heat/flame; stir until smooth.
  • Step #13 Using 1/2 tsp caramel mixture, fill each cookie.
  • Step #14 Melt chocolate chips & shortening in microwave; drizzle over cookies.
