Ingredients
1/2 tsp sugar .
1/2 c cooked carrots, finely sliced .
1 1/2 tsps salt .
1 lb fresh mushrooms .
Braised Fresh Mushrooms .
2 large eggs .
1/2 c peanut oil .
1 tbsp Braggs liquid aminos or soy sauce .
1/2 tsp msg .
2 c peanut oil .
6 slices fresh firm tofu, 3 X 3 X 3/4 inches .
1 1/2 tbsps Braggs liquid aminos or 1 tsp salt .
1/2 c cornstarch .
1 c vegetable broth or water
Directions
Step #1 NOTE use 1 c of the mushrooms in recipe.
Step #2 Braised Fresh Mushrooms Yield 1 1/2 c:.
Step #3 Run water over mushrooms quickly.
Step #4 Cut off & discard brown part of end of stem.
Step #5 Slice lengthwise through the stem into the cap.
Step #6 Keep each slice shape of mushroom.
Step #7 There should be six c.
Step #8 Heat wok until very hot.
Step #9 Add oil & stir fry mushrooms over med heat for 10 mins.
Step #10 Add soy or salt.
Step #11 Stir 5 more mins or until liquid evaporates.
Step #12 Let cool.
Step #13 STORE: Keep submerged in oil in covered container.
Step #14 This will keep up to 2 weeks.
Step #15 This can be used in any stir fry.
Step #16 During the last mins add 1/4 to 1/2 c to add flavor.
Step #17 Lion's Head:.
Step #18 Press & drain the tofu.
Step #19 Set in bowl & mash well.
Step #20 Add remaining ingredients including the Braised Fresh Mushrooms except the oil & broth.
Step #21 Mix well & form 8 balls.
Step #22 Set aside.
Step #23 Heat oil in wok until hot & deep fry 4 lion's heads at a time until browned on all sides.
Step #24 Transfer to casserole.
Step #25 Strain oil & save for another time.
Step #26 Add broth or water to casserole.
Step #27 Cover up & bring to boil then simmer 1 hr.
Step #28 Dish should be piping hot & can be reheated in oven or on stove.
Step #29 You may line casserole or serve this with items such as stir fried celery cabbage.
Step #30 Adjust the seasonings.
