Carrots With Goronzola Cheese Recipe

Ingredients
  • 1/4 c butter .
  • pepper .
  • 1/2 tsp salt .
  • 4 oz gorgonzola, crumbled .
  • 2 1/2 lbs carrots

Directions
  • Step #1 Using a food processor/blender & the slicing blade, slice carrots.
  • Step #2 Using a steamer, put water in bottom of steamer & bring water to a boil.
  • Step #3 Add carrots to steamer rack, cover & cook this until crisp-tender (***carrots can be prepared 2 days ahead, covered & put in the fridged***).
  • Step #4 In a skillet, melt butter over low heat/flame.
  • Step #5 Add cheese & cook this until cheese melts, stirring constantly.
  • Step #6 Stir in carrots, cooking until heated through, salt & pepper, stirring frequently.
