Cream Of Broccoli Soupv Recipe

Ingredients
  • 1 1/4 c chicken broth, divided
  • 1/4 c all-purpose flour
  • 2 tbsps margarine
  • 1 clove garlic, minced
  • 2 1/2 c fresh sliced broccoli, steamed & divided
  • 3 c skim milk
  • salt & pepper to taste

Directions
  • Step #1 In a food processor/blender puree 1 c steamed broccoli, garlic, & 1/4 c chicken broth.
  • Step #2 In a large saucepan over med-heat/flame, melt the margarine.
  • Step #3 Add the flour, & stir until mixture thickens & starts to brown.
  • Step #4 Slowly add in the remaining 1 c chicken broth & milk, stirring often.
  • Step #5 Allow mixture to thicken, about 5 mins.
  • Step #6 Then add the puree mixture & the remaining 1 1/2 c steamed broccoli.
  • Step #7 Heat through, & allow to thicken for about 5 mins.
  • Step #8 Spice up with salt & pepper.
