Tomatoes And Peppers For Lunch Recipe

Ingredients
  • 2 slices whole wheat bread .
  • 1/2 red pepper, roasted .
  • 2 tsps balsamic vinaigrette .
  • 3 slices tomatoes, 1/4 inch thick .
  • 1 oz fat free mozzarella cheese

Directions
  • Step #1 Toast your bread Douse with a balsamic vinaigrette (or other favorite) Add thinly sliced tomatoes.
  • Step #2 Add a layer of roasted peppers, any color.
  • Step #3 Add mozzarella.
  • Step #4 Sprinkle top with herbs (thyme is good with this, or oregano) & salt & pepper.
  • Step #5 If you want melted cheese, do not nuke it, place this in broiler for a few mins, this will make it soggy.
