Citrus Sponge Cake Recipe

Ingredients
  • 1/4 tsp salt .
  • 2 tsps hot water .
  • 1 1/4 tsps baking powder .
  • 1 c sugar, divided .
  • 3 egg yolks .
  • 1 1/4 tsps vanilla extract .
  • 1/4 tsp grated lemon peel .
  • 1 1/2 c cake flour .
  • 3/4 tsp grated orange peel .
  • 6 egg whites .
  • 1/2 c orange juice, room temp

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Beat egg yolks until slightly thickened.
  • Step #3 Gradually add 3/4 c of sugar & hot water to yolks, beating until thick & lemon colored.
  • Step #4 Blend in orange juice, vanilla, orange & lemon peels.
  • Step #5 Sift together cake flour, baking powder & salt.
  • Step #6 Add to wet ingredients.
  • Step #7 In a separate bowl, beat egg whites until soft peaks form.
  • Step #8 Add remaining 1/4 c sugar, a tbsp at a time until stiff peaks form.
  • Step #9 Fold 1/4 of the egg white mixture into batter until incorporated.
  • Step #10 Fold in remaining egg whites.
  • Step #11 Spoon into an ungreased 10 inch tube pan.
  • Step #12 Bake at 350 degrees for 20-25 mins, or until cake springs bake when pressed lightly.
  • Step #13 Immediately invert pan & cool.
