Florida Rice And Avocado Salad Recipe

Ingredients
  • 2 tbsps vegetable oil .
  • 3 tbsps fresh lemon juice .
  • 2 avocados, cut into 1/2-inch cubes .
  • 3 c cooked rice, cooled .
  • salad greens (optional) .
  • 1/2 c green bell peppers, julienned .
  • 1 garlic clove, minced .
  • 1 c celery, diagonally sliced .
  • tomatoes, cut in wedges for garnish .
  • 1 tsp sugar .
  • 2 c cooked chicken, cubed .
  • 1 1/2 tsps salt .
  • 1/4 tsp white pepper .
  • 1/4 c onions, minced .
  • hot pepper sauce, to taste

Directions
  • Step #1 Place lemon juice, white pepper, sugar, oil, salt, garlic & pepper sauce in a small jar with lid; shake well.
  • Step #2 Pour over everything else except the rice & toss to mix well as you want to be sure to coat the avocado.
  • Step #3 Add the rice & mix.
  • Step #4 Cover up & put in the fridge 1 to 2 hrs.
  • Step #5 Adjust seasonings & serve on salad greens if used, garnishing with tomato wedges.
  • Step #6 NOTE: I did not include the time to cook the rice.
