Chunky Chicken And Chorizo Chili Recipe

Ingredients
  • 1 tbsp extra virgin olive oil .
  • 1 (12 oz) bottle beer .
  • 1 tbsp cumin .
  • 3 tbsps chili powder .
  • salt .
  • 1 (15 oz) can kidney beans, drained .
  • 2 scallions, finely sliced .
  • 3 garlic cloves, finely sliced .
  • 2 tbsps butter .
  • 2 tbsps thyme leaves, sliced .
  • 3/4 lb chorizo sausage, sliced .
  • 1 red bell pepper, sliced .
  • 2 c quick-cooking polenta mix .
  • 2 lbs ground chicken .
  • 1 onion, sliced .
  • 1 (28 oz) can sliced tomatoes (fire roasted) .
  • 6 c chicken stock

Directions
  • Step #1 Heat a large, deep skillet over medium-high heat with 1 T olive oil.
  • Step #2 Add chorizo & render its fat, 2 mins.
  • Step #3 Push the chorizo off to the sides of the skillet & add ground chicken.
  • Step #4 Brown & crumble the chicken, cooking 5-6 mins.
  • Step #5 Spice up the chicken with chili powder & cumin while it cooks.
  • Step #6 Combine the onion, garlic, peppers & beans to meats & cook another 5-6 mins.
  • Step #7 Stir the beer into the chili & reduce the liquid a min then add the tomatoes & heat though.
  • Step #8 Spice up the chili with salt, to taste, & reduce heat to low.
  • Step #9 Bring 6 c stock to a boil in a medium pot, stir in the polenta & keep stirring until the polenta masses & thickens to a porridge, 2-3 mins.
  • Step #10 Stir in butter, scallions & thyme & season this with salt, to taste.
  • Step #11 Fill bowls halfway with polenta & make a well in the center.
  • Step #12 Fill up bowls with chili & serve.
