Bread Bowls By King Arthur Recipe

Ingredients
  • 1 1/2 tsps salt .
  • 3 c king arthur unbleached all-purpose flour .
  • 2 tsps sugar .
  • 1 1/2 c water .
  • 2 1/4 tsps instant yeast .
  • 1 c semolina

Directions
  • Step #1 .
  • Step #2 Combine all of the dough ingredients & mix & knead them together -- by hand, mixer or bread machine -- till you've made a soft, smooth dough.
  • Step #3 Allow the dough to rise, covered, for 1 to 1 1/2 hrs.
  • Step #4 Divide the dough into five pieces, & form them into round (not flattened) balls.
  • Step #5 Place them on a lightly greased or parchment-lined baking sheet, & set them aside to rise in a warm place for 1 1/2 hrs, cover lightly, or until they've almost doubled in size.
  • Step #6 Uncover the balls & let them sit for 10 to 15 mins, to develop a tough skin.
  • Step #7 Just before placing the bread bowls in the oven, mist them heavily with water.
  • Step #8 Bake the bread bowls in a pre-heated 425°F oven for 18 to 22 mins, until they're a deep, golden brown.
  • Step #9 Turn off the oven, prop the door open a little, & leave the bread bowls inside for 15 mins; this will keep the crust crisp.
  • Step #10 Remove the bread bowls from the oven & cool them completely before cutting the tops off & removing the insides; (reserve the insides to make bread crumbs).
  • Step #11 Yield: 5 large bread bowls.
