Fried Apples'n'onions (little House) Recipe

Ingredients
  • 6 yellow onions (2 lbs) .
  • 6 tart apples (2 lbs) .
  • 1/2 lb sliced bacon or salt pork .
  • 2 tbsps brown sugar

Directions
  • Step #1 Fry bacon or salt pork slices in a skillet until brown & crisp.
  • Step #2 Set them aside on a warm serving platter.
  • Step #3 While the meat is frying, peel the onions & slice them as thinly as possible.
  • Step #4 Core the apples & cut them crosswise in circles about 1/4 inches thick.
  • Step #5 Apple skins help the slices keep their shape & add color to the dish, so don't peel unless the skins are tough or scarred.
  • Step #6 Drain all but 1 tbsp of fat from the skillet, then add the onion slices.
  • Step #7 Cook them over medium high heat for about 3 mins.
  • Step #8 Cover up with apple slices in an even layer.
  • Step #9 Sprinkle top brown sugar over all, & cook this until tender, cover the skillet, a few mins more.
  • Step #10 Stir only to prevent scorching.
  • Step #11 Remove to the warm plate with the bacon or salt pork slices & serve.
