Scallops With Ginger Recipe

Ingredients
  • 1 green onion .
  • 1 tbsp soy sauce .
  • white pepper .
  • 1 tbsp vegetable oil .
  • 6 scallops .
  • 1 tbsp dry sherry .
  • 1 piece fresh ginger (about 1.5 inches long)

Directions
  • Step #1 For the dipping mix soja sauce & sherry in a bowl.
  • Step #2 Sprinkle top scallops with a little pepper.
  • Step #3 Divide the green onion in white & green part.
  • Step #4 Cut both in very fine stripes.
  • Step #5 Cut ginger in very fine stripes.
  • Step #6 Heat oil in a pan over high heat.
  • Step #7 The oil should be very hot (near the smoke point).
  • Step #8 Put scallops into the pan an sear for about 30 to 45 seconds.
  • Step #9 Remove from heat.
  • Step #10 Put scallops (seared side up) into the dipping & drizzle some dipping on top.
  • Step #11 Sprinkle top ginger & the white part of the green onion over them.
  • Step #12 Place a steamer basket in a suited pot & fill in just enough water, that it will not reach the steamer basket.
  • Step #13 Bring water to a boil.
  • Step #14 Place scallops with onions & ginger on little pieces of parchment paper & put onto the steamer basket.
  • Step #15 Cover up pot with lid & steam scallops for 5 mins.
  • Step #16 Take scallops out of the steamer & serve hot with onions & ginger on top & the dipping sauce.
  • Step #17 Sprinkle top with stripes of green onions (green part).
