Liptauer Cheese Recipe

Ingredients
  • 1/2 c sour cream .
  • 2 lbs cream cheese, at about room temp .
  • 3 lbs large-curd cottage cheese, drained in cheesecloth overnight .
  • salt (optional) .
  • 3 tbsps Hungarian paprika .
  • 1 tsp fresh ground black pepper .
  • 1 tsp caraway seeds, ground in a spice ginger .
  • 1 tsp dry mustard .
  • 3 garlic cloves, peeled & crushed .
  • 1 c yellow onions, peeled & sliced (1/4-inch dice)

Directions
  • Step #1 Place some cheesecloth In a large-ish colander & pour in the cottage cheese.
  • Step #2 Tie up the ends of the cloth so that you have a bag you can hang over a bowl overnight.
  • Step #3 You want to drain the whey from cheese.
  • Step #4 The next morning, mix all ingredients except the cottage cheese, paprika, & optional salt.
  • Step #5 Mix well & then fold in the paprika & cottage cheese.
  • Step #6 Do this carefully, as you want the spread to have some texture.
  • Step #7 Taste for salt & add if desired.
