Carrot Cake Recipe

Ingredients
  • 1 lb powdered sugar .
  • 1/2 tsp salt .
  • 1 tsp cinnamon .
  • 1 1/2 c salad oil .
  • 2 c sugar .
  • 1 tsp vanilla .
  • 4 eggs, unbeaten .
  • 1 c sliced walnuts or pecans .
  • 1 (8 oz) package cream cheese .
  • 2 c flour .
  • 2 tsps baking soda .
  • 3 c grated raw carrots .
  • Cream Cheese Frosting

Directions
  • Step #1 In electric mixer bowl, mix carrots, eggs, sugar & oil, beat ingredients thoroughly.
  • Step #2 Add remaining ingredients.
  • Step #3 Pour into 2-greased & floured 9” layer pans.
  • Step #4 Bake at 350 degrees for 40-45 mins.
  • Step #5 Let cool, then put layers together with the following frosting in between the layers.
  • Step #6 FOR Cream Cheese Frosting:.
  • Step #7 Soften cream cheese & beat until fluffy.
  • Step #8 Gradually beat in powdered sugar.
  • Step #9 You may need a little more powdered sugar to make into a good spreading & swirling consistency.
  • Step #10 Apply to a cooled cake.
