Frittata With Asparagus, Canadian Bacon And Parmesan Recipe

Ingredients
  • 4 slices Canadian bacon, coarsely sliced (about 2 oz) .
  • 1/4 tsp freshly grated lemon zest .
  • 1 tbsp extra-virgin olive oil .
  • 4 tbsps freshly grated parmesan cheese .
  • 4 oz medium asparagus spears, woody stems trimmed, cut into 1/2-inch pieces (about 8) .
  • 2 tbsps skim milk .
  • 1 1/4 c egg substitute or 5 large eggs .
  • fresh ground black pepper .
  • 1/2 tsp kosher salt (or to taste)

Directions
  • Step #1 Position an oven rack in the upper part of the oven & preheat the broiler.
  • Step #2 Whisk the eggs, the milk, 3 tbsps of the cheese, lemon zest, salt, & pepper to taste together in a bowl.
  • Step #3 Heat the olive oil in an 8-inch nonstick skillet over med-heat/flame.
  • Step #4 Add the asparagus & Canadian bacon, & cook this until the asparagus is crisp-tender, about 4 mins.
  • Step #5 Reduce heat to low, pour the egg mixture into the skillet, stirring carefully to distribute the fillings evenly.
  • Step #6 Cover up, but does not get too brown, & cook this until the bottom sets, about 9 mins.
  • Step #7 Remove the cover, scatter the remaining 1 tbsp of cheese over the surface.
  • Step #8 Run the frittata under the broiler until the top sets & browns slightly, about 1 min.
  • Step #9 Set aside for about 5 mins before unmolding.
  • Step #10 Slip the frittata out of the pan onto a cutting board, cut into wedges.
  • Step #11 Serve warm or room temperature.
