Pizzoccheri Soup Recipe

Ingredients
  • 1 potato, peeled & sliced .
  • pepper .
  • 6 1/4 vegetable stock .
  • 3 1/2 oz buckwheat noodles, broken or whole wheat spaghetti .
  • 3 garlic cloves, sliced .
  • salt .
  • 2 1/2 oz bitto cheese or Fontina cheese, cubed .
  • 3 1/4 oz green cabbage, shredded .
  • sea salt .
  • 1 onion, sliced .
  • 4 tbsps olive oil

Directions
  • Step #1 Saute the potato, onion, garlic & oil In a large-ish saucepan until softened.
  • Step #2 Pour in the stock, season this with salt & pepper, bring to a boil & let simmer partially covered for 10-12 mins until potato is soft.
  • Step #3 Add the broken pasta & cook for another 5 mins, then mix in the cabbage.
  • Step #4 Let simmer for another 5 mins.
  • Step #5 Mix in the cheese cubes Divide into bowls & garnish with a pinch of sea salt.
