Olive-pepper Spirals Recipe

Ingredients
  • lettuce leaves .
  • 1 tbsp olive oil .
  • 2 tsps capers, drained .
  • 1 c olives (pitted ripe or Greek, drained) .
  • 1 c purchased roasted red peppers, well drained & cut into thin strips .
  • 2 tsps lemon juice or lime juice .
  • 4 oz cream cheese (with chive & onion) .
  • fresh flat leaf parsley (optional) .
  • 3 (9-10 inch) flour tortillas (any flavor)

Directions
  • Step #1 In food processor/blender, mix olives, capers, oil, & lemon juice.
  • Step #2 Cover up & process with several on/off turns until olives are very finely sliced.
  • Step #3 Arrange tortillas on a flat surface.
  • Step #4 Spread one-third of the cream cheese over each tortilla, spread one-third of the olive mixture over each.
  • Step #5 Place several lettuce leaves on top of olive mixture.
  • Step #6 Arrange one-third of the pepper strips over lettuce on each tortilla.
  • Step #7 Roll up tortillas & wrap in plastic wrap.
  • Step #8 Chill in the refrigerator for at least for 2 to 4 hrs.
  • Step #9 To serve, slice each tortilla roll this into seven slices.
  • Step #10 Arrange spirals on a serving platter.
  • Step #11 If desired, garnish with parsley.
