Hearty Corn Chowder With Peas Recipe

Ingredients
  • 1 tsp mild hot sauce .
  • 1 large onion, sliced .
  • 1/2 c frozen peas, thawed .
  • 2 tsps olive oil .
  • 2 russet potatoes, peeled & cut into 1/2 inch cubes .
  • 4 garlic cloves, minced .
  • 2 oz Italian sausage, cut into small chunks .
  • 15 oz creamed corn .
  • 14 oz low sodium vegetable broth .
  • 1 c frozen corn, thawed

Directions
  • Step #1 Heat oil in a medium skillet over medium-high heat.
  • Step #2 Add the sausage, & cook, strirring until sausage is lightly brown & the onions are translucent, onions & garlic, 5 to 8 mins.
  • Step #3 Combine sausage mixture, broth & potatoes in the slow cooker (aka crockpot).
  • Step #4 Cover up & cook on High 3 to 4 hrs or Low 5 to 6 hrs until the potaotes are very tender.
  • Step #5 Using the back of a spoon, coarsely mash the potaotes.
  • Step #6 Stir in creamed corn & the frozen corn.
  • Step #7 Cover up & cook on High 1 hr.
  • Step #8 Stir in peas & cook this until peas are tender, about 10 mins.
  • Step #9 Stir in the hot sauce.
