Red Pepper And Bean Falafel Recipe

Ingredients
  • 2 tsps mild chili powder .
  • 1 egg yolk .
  • 1 tsp lemon juice .
  • 1 red pepper, deseeded & sliced .
  • 425F g red kidney beans, drained & rinsed .
  • 1 grated lemon, rind of .
  • 4 tbsps mayonnaise .
  • vegetable oil (for frying) .
  • 2 tbsps vegetable oil .
  • plain flour, for dusting .
  • 4 garlic cloves, crushed .
  • 75 g breadcrumbs .
  • 75 g green beans, sliced .
  • Lemon mayo

Directions
  • Step #1 Boil the green beans for 3 mins until cooked but still crunchy, drain & set aside.
  • Step #2 Heat the oil in a frying pan & fry the pepper, garlic & chilli powder for 2 mins.
  • Step #3 Place the pepper mix in a food processor/blender & add the kidney beans, egg yolk & breadcrumbs.
  • Step #4 Blend until coarsely sliced & add the green beans & seasoning if desired.
  • Step #5 Blend until mixture comes together.
  • Step #6 Divide the mixture into 8 & using floured hands shape the mix into patties.
  • Step #7 heat the oil & fry the cakes for about 3 mins each side, remove & drain.
  • Step #8 Make the mayo by mixing all the ingredients & serve this with the hot patties.
