Double Ginger Mango Shortbread Recipe

Ingredients
  • 3/4 tsp salt .
  • 1/4 c brown sugar .
  • 1/2 c sliced almonds .
  • 1 c unsalted butter, cold & cut into 1/2 inch cubes .
  • 1 1/2 tsps ground ginger .
  • 2 1/4 c all-purpose flour .
  • 1 egg, slightly beaten .
  • 1 tbsp freshly grated gingerroot .
  • 2 tbsps hot water .
  • 1/2 c dried mango, cut into 1/4 inch pieces .
  • 3/4 c granulated sugar

Directions
  • Step #1 Preheat oven to 325ºF.
  • Step #2 Combine mango & grated gingerroot in a small bowl; stir in the hot water & set aside.
  • Step #3 (kitchen shears cut the dried mango easier than a knife).
  • Step #4 Combine flour, sugars, ground ginger & salt.
  • Step #5 Cut in butter (if using a food processor/blender - pulse 5-6 times until mixture resembles coarse meal.
  • Step #6 Don't over process!).
  • Step #7 Combine beaten egg with mango mixture from step 2 & stir in theto flour/butter mixture.
  • Step #8 (Again, if using a food processor/blender, only pulse 5-6 times to mix).
  • Step #9 Press evenly into a 10-inch by 15-inch rimmed baking pan.
  • Step #10 Sprinkle top with almonds.
  • Step #11 Bake for 20-25 mins or until lighlt browned.
  • Step #12 Cut into 1 1/2 inch pieces while still warm.
