Ingredients
3 c white sugar
1/8 tsp salt
1 tsp baking soda
3/4 c unsweetened cocoa powder
3 c all-purpose flour
4 eggs
2 c unsweetened applesauce
3/4 c butter, softened
1/2 tsp baking powder
1 tbsp vanilla extract
Directions
Step #1 Preheat oven to 325F degrees F (165 degrees C).
Step #2 Wash 8 (pint) straight sided, wide mouth canning jars in hot soapy water.
Step #3 Rinse well, dry & let them come to about room temp.
Step #4 Grease insides of jar well.
Step #5 In a medium bowl, baking soda, sift flour, baking powder & salt.
Step #6 Set aside.
Step #7 In a large bowl, cream butter with half of the butter until fluffy.
Step #8 Add eggs & remaining sugar & beat in.
Step #9 Add vanilla & applesauce & mix.
Step #10 Add the flour mixture in three increments, mixing well after each addition.
Step #11 Pour 1 c of batter into each jar & carefully remove any batter from the rims.
Step #12 Bake at 325F degrees F (165 degrees C) for 40 mins.
Step #13 While cakes are baking, sterilize lids & rings by boiling them in a saucepan of water.
Step #14 Keep them in the hot water until ready to use.
Step #15 When the cakes have finished baking, remove jars from oven.
Step #16 Make sure jar rims are clean.
Step #17 (If they're not, jars will not seal correctly).
Step #18 While jars are still hot, place lids on jars, & screw rings on tightly.
Step #19 Jars will seal as they cool.
Step #20 Place the jars on the counter & listen for them to "ping" as they seal.
Step #21 If you miss the "ping", wait until they are completely cool & press on the top of the lid.
Step #22 If it doesn't move at all, it's sealed.
Step #23 Unsealed jars should be stored in the refrigerator & eaten within 2 weeks.
Step #24 Sealed jars may be placed in a freezer.
