Passover Brisket By Emeril Recipe

Ingredients
  • Brisket .
  • Essence of Emeril Creole Spice uping .
  • 1 tbsp dried oregano leaves .
  • 2 tsps salt .
  • 1 tbsp black pepper .
  • 1 c kosher for passover chili sauce .
  • 1 quart low sodium beef broth .
  • 3 tbsps vegetable oil .
  • 2 tsps Essence of Emeril .
  • 1 tsp fresh ground black pepper, to taste .
  • 1 tbsp cayenne pepper .
  • 1 tsp onion powder .
  • 2 tbsps salt .
  • 3 large onions, sliced .
  • 2 1/2 tbsps paprika .
  • garlic cloves .
  • 8-10 lbs beef brisket .
  • 1 tbsp dried thyme .
  • 1 c kosher for passover ketchup .
  • 1 tbsp onion powder .
  • 1 tsp garlic powder .
  • 1 c brown sugar .
  • 2 tbsps garlic powder

Directions
  • Step #1 Preheat oven to 500 degrees F.
  • Step #2 Using a paring knife & your finger, stuff brisket all over with garlic.
  • Step #3 (I think this means to make slits in the meat & stuff small pieces of garlic into those slits & I would rub all over with garlic, to taste).
  • Step #4 Place brisket in a baking dish or casserole & bake this until browned on top, remove this from oven, turn brisket & return to oven until browned on both sides.
  • Step #5 Reduce oven temperature to 350 degrees F.
  • Step #6 Add enough beef stock to casserole to come up 1 inch on sides, cover with foil wrap & bake one hr.
  • Step #7 While brisket is cooking, stirring every once in awhile, until caramelized & most liquid has evaporated, heat a large skillet over medium high heat & saute onions in vegetable oil, about 20 mins.
  • Step #8 Set onions aside.
  • Step #9 Remove brisket from oven after one hr & add caramelized onions & all remaining ingredients, moving meat around to mix ingredients.
  • Step #10 Cover up & continue to bake this until very tender but not falling apart, another 2 to 3 hrs.
  • Step #11 Remove brisket to a carving board & slice.
  • Step #12 Strain reserved cooking liquids & pour over sliced brisket.
  • Step #13 Brisket may be returned to casserole dish & allowed to cool, then served the next day.
