Ingredients
100 g butter .
1 large egg, beaten, plus extra .
Optional .
100 g watercress, roughly sliced .
grated fresh nutmeg .
1 tbsp oil .
1 egg, beaten for brushing .
150 ml milk .
225 g gluten-free flour, mix plus extra .
FOR THE FILLING .
1 medium onion, finely sliced .
FOR THE PASTRY .
gluten-free flour, for rolling .
150 ml log soft rindless goat's cheese, in rough chunks .
2 large eggs
Directions
Step #1 Put the flour & a pinch of salt In a large-ish bowl.
Step #2 Rub in the butter until the mixture looks like breadcrumbs.
Step #3 Stir in the egg & about 1-2 tbsp water to form a soft dough.
Step #4 Knead well then wrap & chill for at least 30 mins.
Step #5 Preheat the oven to 200C/gas 6/fan 180C [392 F].
Step #6 Knead the pastry again & roll it out to line a 20cm loose-bottomed flan tin (the pastry won't shrink, so no need to chill).
Step #7 Patch holes with spare pastry & brush the base & sides with egg.
Step #8 For the filling, fry the onion in the oil until just soft, add the watercress & cook this until just wilted.
Step #9 Beat the eggs & milk & stir in the the watercress mixture & goat's cheese.
Step #10 Spice up & if you like, add a pinch of nutmeg.
Step #11 Put the flan tin on a bakingsheet & bake the pastry blind for 5 mins.
Step #12 Add the filling & bake for 15 mins.
Step #13 Reduce heat to 180C/gas 4/ fan 160C [356 F] & cook for 25-30 mins or until lightly set.
