Ingredients
1/2 c onions, thinly sliced .
2 tbsps calvados or brandy .
1 tart apple, peel, core, & slice thin .
1/2 c chicken stock .
1/4 c heavy cream .
1/2 c apple cider .
pepper .
2 pork tenderloins, trim fat & skin .
salt .
2 tsps Dijon mustard .
1/2 tsp dried sage .
1 pinch ground ginger .
1 tbsp olive oil
Directions
Step #1 Heat oven to 400F degrees.
Step #2 Rub sage, salt & pepper into the tenderloins.
Step #3 Heat oil in skillet over high heat.
Step #4 Sear tenderloins until browned.
Step #5 Place seared tenderloins on a baking sheet & bake 10 mins or until temperature is 135 degrees.
Step #6 Remove meat & let rest.
Step #7 Add more oil to skillet (if needed) & saute onions until soft.
Step #8 Add the apples to the skillet & cook for an extra 2 mins.
Step #9 Add stock, Calvados, cider, mustard, & ginger - deglaze the skillet.
Step #10 Simmer liquid until it reduces by about half.
Step #11 Stir in cream & let simmer over high heat until the mixture coats the back of a spoon.
Step #12 Serve sliced tenderloin with the sauce spooned over it.
