Normandy Pork Tenderloin Recipe

Ingredients
  • 1/2 c onions, thinly sliced .
  • 2 tbsps calvados or brandy .
  • 1 tart apple, peel, core, & slice thin .
  • 1/2 c chicken stock .
  • 1/4 c heavy cream .
  • 1/2 c apple cider .
  • pepper .
  • 2 pork tenderloins, trim fat & skin .
  • salt .
  • 2 tsps Dijon mustard .
  • 1/2 tsp dried sage .
  • 1 pinch ground ginger .
  • 1 tbsp olive oil

Directions
  • Step #1 Heat oven to 400F degrees.
  • Step #2 Rub sage, salt & pepper into the tenderloins.
  • Step #3 Heat oil in skillet over high heat.
  • Step #4 Sear tenderloins until browned.
  • Step #5 Place seared tenderloins on a baking sheet & bake 10 mins or until temperature is 135 degrees.
  • Step #6 Remove meat & let rest.
  • Step #7 Add more oil to skillet (if needed) & saute onions until soft.
  • Step #8 Add the apples to the skillet & cook for an extra 2 mins.
  • Step #9 Add stock, Calvados, cider, mustard, & ginger - deglaze the skillet.
  • Step #10 Simmer liquid until it reduces by about half.
  • Step #11 Stir in cream & let simmer over high heat until the mixture coats the back of a spoon.
  • Step #12 Serve sliced tenderloin with the sauce spooned over it.
