Step #1 COMBINE onions, broth, celery, pepper & peeled & sliced potatoes into large saucepan.
Step #2 BOIL then cover & SIMMER for 20 mins.
Step #3 In small bowl, mix 1/4 c of milk & cornstarch until smooth.
Step #4 COMBINE into above mixture.
Step #5 ADD remaining milk & BOIL.
Step #6 STIR constantly for about 3 mins until thick.
Step #7 REMOVE from heat & stir in the cheese.
Step #8 Allow mixture to cool slightly before putting it in a mixer to make smooth.
Step #9 If necessary, reheat via stovetop or microwave 2 mins until hot.
Step #10 TOP with sliced chives or allspice/nutmeg.
Step #11 NOTE: Amount if pepper is personal taste.
Step #12 NOTE: I mixed a tsp of a chilli recipe from the Golden Door Retreat into it (is fantastic for losing weight & tasty too; 300F grams of chilli peppers (all of it), 2 tbsp apple cider, 2 tsp tamari --- is HOT :).
