Braised Lamb With Prunes Recipe

Ingredients
  • 600 g boneless lamb, sliced .
  • 3 sprigs parsley, finely sliced .
  • 1/2 tsp cinnamon .
  • 1 onion, peeled & sliced .
  • 1 tbsp sugar .
  • 2 bay leaves .
  • 5 tbsps white wine vinegar .
  • 2 tbsps flour .
  • 4 tbsps oil .
  • 200 ml lamb stock, made from lamb bones (I make my own & freeze to use when required) .
  • 200 g prunes, stoned .
  • 1 pinch ground cloves .
  • salt & pepper

Directions
  • Step #1 Dust the lamb pieces in the flour & add salt & pepper to taste, set aside.
  • Step #2 Heat the oil In a large-ish skillet, add onion & saute until lightly coloured.
  • Step #3 Add meat to skillet & cook this until browned.
  • Step #4 Add stock & let simmer until the sauce has slightly thickened, about 20-30 mins.
  • Step #5 Add the sugar, vinegar, cinnamon, bay leaves, cloves & prunes.
  • Step #6 Bring to boil & then simmer again for about 20 more mins or until meat is tender.
  • Step #7 Serve hot sprinkled with the parsley.
  • Step #8 Great on mashed potatoes or steamed rice.
