Chantilly Frosting Recipe

Ingredients
  • 1 1/3 c flaked coconut, & (optional) or sliced macadamia nuts (optional) .
  • 1 c white sugar .
  • 1/2 c butter .
  • 3 egg yolks, beaten .
  • 1 tsp vanilla extract .
  • 1 c evaporated milk

Directions
  • Step #1 Combine milk, sugar, egg yolks, butter & vanilla in the top portion of a double boiler, or in a bowl placed over a saucepan of boiling water.
  • Step #2 Cook over med-heat/flame until thick, about 12 mins, stirring constantly to keep the eggs from scrambling & the frosting from clumping.
  • Step #3 Remove from heat.
  • Step #4 Add coconut and/or nuts if desired.
  • Step #5 Cool, stirring every once in awhile, until thick enough to spread.
  • Step #6 Makes enough to frost a 9- by-13-inch cake or two 8-inch layers.
