Ginger-peach Muffins Recipe

Ingredients
  • 1/2 tsp salt .
  • 2 tsps baking powder .
  • 1 tsp baking soda .
  • 3/4 c buttermilk .
  • 1 1/2 tbsps grated peeled fresh ginger .
  • 1 c all-purpose flour .
  • 3/4 c cake flour .
  • 1/2 c unsalted butter, melted .
  • 1 c sugar .
  • 2 large eggs, beaten .
  • 1 tsp vanilla extract .
  • 1 fresh peach, sliced

Directions
  • Step #1 Preheat oven to 400°; spray a 12-c muffin tin with nonstick cooking spray.
  • Step #2 Sift flours together in a bowl; add in the sugar, baking soda, baking powder, & salt; stir this to mix.
  • Step #3 Beat the eggs & buttermilk together in another bowl; add in the butter, & vanilla, ginger, peach, stirring to mix.
  • Step #4 Pour into the dry mixture & stir this together quickly, taking care not to overbeat.
  • Step #5 Spoon batter into muffin tin, filling c 2/3 full.
  • Step #6 Bake 8-10 mins or until tops are browned; remove this from oven; cool in pan for 5 mins & remove to finish cooling on a wire rack.
