Tangerine Beef Stir-fry Recipe

Ingredients
  • 4 tsps vegetable oil .
  • 6 oz snow peas, strings removed .
  • 1/4 c water .
  • 1 tbsp cornstarch .
  • 1 tsp sesame oil .
  • 1/4 c dry sherry .
  • 1 tsp cornstarch .
  • 2-3 tangerines .
  • 2 tbsps low sodium soy sauce .
  • 1 lb flank steaks, 1/8 inch slices .
  • 1 tbsp fresh ginger, grated .
  • 3 green onions, cut into 1 inch pieces .
  • 1 red pepper, sliced thin

Directions
  • Step #1 remove peel in strips from 2-3 tangerines, remove any white pith from peel, set aside.
  • Step #2 cut remaining pith from tangerines, juice tangerines into 2 c measuring c, remove seeds.
  • Step #3 stir in the sherry, oil, 1 t cornstarch, set aside.
  • Step #4 in medium bowl, mix soy sauce & 1 T cornstarch, add beef & coat to toss, set aside.
  • Step #5 heat 2 t vegetable oil in skillet, cook tangerine peel for 2-3 mins, transfer to large bowl.
  • Step #6 Cook peppers, peas, & green onions in skillet for 1 min, add water & cook for 2 mins stirring often.
  • Step #7 Add to bowl with peels.
  • Step #8 add 1 t oil to skillet, cook half beef until browned, add to vegetable bowl.
  • Step #9 repeat with other half of beef.
  • Step #10 add juice to skillet, heat until boiling, boil 1 min.
  • Step #11 return beef mixture to skillet, heat through.
  • Step #12 Serve over rice.
