Curry Fish Stew Recipe

Ingredients
  • 3/4 lb cod fillets, cut into 1 inch cubes
  • 2 tbsps curry powder
  • garlic powder to taste
  • 1 pint light whipping cream
  • 1 fresh red chile pepper, finely sliced
  • 1 medium onion, finely sliced
  • 1 1/2 tbsps sliced pimento peppers
  • 2 green onions, finely sliced
  • salt & pepper to taste
  • 2 tbsps soybean oil

Directions
  • Step #1 Heat oil in a medium saucepan over med-heat/flame.
  • Step #2 Stir in onion, green onions, red chile pepper, & pimentos.
  • Step #3 Cook & stir until onions are tender, about 5 mins.
  • Step #4 Mix in curry powder, & continue to cook & stir 2 to 5 mins.
  • Step #5 Blend cream into the onion mixture, & let simmer until thickened.
  • Step #6 Mix in cod, cooking 3 to 5 mins, until easily flaked with a fork.
  • Step #7 Spice up with garlic powder, salt, & pepper.
