Mexican Chicken Stew Recipe

Ingredients
  • 1 dash cloves .
  • 2 garlic cloves, minced .
  • 1/2 c picante sauce .
  • 2 (1/2 lb) whole boneless skinless chicken breasts, split .
  • 1 tsp salt .
  • 1 tbsp oil .
  • 1 dash cinnamon .
  • 1 (16 oz) can whole kernel corn, drained .
  • 1 tsp cumin .
  • 1 green pepper, cut into 1/2 inch pieces .
  • 1 large onion, cut into 1/2 inch pieces

Directions
  • Step #1 Cut chicken into 3/4 inch pieces, sprinkle with 1/2 tsps salt.
  • Step #2 Cook in oil in large saucepan until chicken loses pink color.
  • Step #3 Add onion & garlic.
  • Step #4 Continue cooking, stirring often until onion is soft.
  • Step #5 Add remaining salt, cumin, tomatoes & their liquid, picante sauce, corn, cinnamon & cloves.
  • Step #6 Bring to boil; reduce heat & let simmer covered 10 mins.
  • Step #7 Add green pepper.
  • Step #8 Simmer 10 mins.
  • Step #9 Ladle into soup bowls & top this with a dab of sour cream if desired.
