Honey, Mustard And Rosemary Roast Pork Recipe

Ingredients
  • 2 lbs boneless pork loin roast .
  • 1/2 c whipping cream .
  • 2 tbsps fresh rosemary, sliced or 1 tbsp dried rosemary .
  • 6 tbsps honey .
  • 3/4 c beer .
  • 2 tbsps garlic, sliced .
  • 1/2 c Dijon mustard .
  • 1/4 c olive oil

Directions
  • Step #1 Whisk first 6 ingredients to mix in 8x8x2-inch glass baking dish.
  • Step #2 Add pork & turn to coat.
  • Step #3 Let stand at about room temp 1 hr or cover & put in the fridge overnight, turning every once in awhile.
  • Step #4 Preheat oven to 350°F Transfer pork to rack set in roasting pan; reserve marinade.
  • Step #5 Roast until thermometer inserted into center registers 150°F.
  • Step #6 , about 55 mins.
  • Step #7 Let stand 15 mins.
  • Step #8 Strain marinade into heavy medium saucepan.
  • Step #9 Add cream & juices from roasting pan.
  • Step #10 Boil sauce until reduced to 1 1/2 c, about 15 mins.
  • Step #11 Spice up with salt & pepper.
  • Step #12 Slice pork; arrange on platter.
  • Step #13 Drizzle some sauce over.
  • Step #14 Serve, passing extra sauce separately.
  • Step #15 Serves 4 to 6.
