Malfatti Or Gnocchi Gnudi (pasta Without The Pasta) Recipe

Ingredients
  • 2 egg yolks .
  • flour, for dusting .
  • 5 tbsps butter (melted) .
  • 1/4 tsp nutmeg (grated) .
  • 2 c ricotta cheese (fresh) .
  • 4 lbs spinach (after cleaning & trimming stems, this should yield about 2 1/2 lbs of useable spinach) .
  • 1/2 c parmesan cheese (grated fine) .
  • breadcrumbs (very dry, up to 1/4 c, only if necessary) .
  • salt & pepper, to taste

Directions
  • Step #1 Wash the cleaned spinach & shake off the moisture until only a small amount of water clings to the leaves.
  • Step #2 Steam lightly until just wilted.
  • Step #3 Drain the spinach well.
  • Step #4 Put the spinach into a lint-free dish towel & squeeze out the water.
  • Step #5 Twist the dish towel & squeeze more water out.
  • Step #6 Keep squeezing the spinach until you truly believe that you've gotten all the water out.
  • Step #7 Now, continue to squeeze out the remaining water.
  • Step #8 Spread out the spinach onto a cookie sheet that has been lined with paper towels to soak up any remaining moisture.
  • Step #9 If it looks sort of dry & a bit stringy, you're ready to move on.
  • Step #10 Mix the ricotta cheese, egg yolks, nutmeg, parmesan cheese, salt & pepper.
  • Step #11 Set aside.
  • Step #12 Chop the spinach into small pieces.
  • Step #13 Do not use a food processor/blender for this process, you are looking for pieces not puree.
  • Step #14 Add the spinach to the ricotta mixture.
  • Step #15 Pull out a small ball of "dough" & make a walnut-shaped dumpling.
  • Step #16 The dough will be very very soft, but it should hold together.
  • Step #17 If you truly believe that you MUST add some breadcrumbs, do so a little bit at a time.
  • Step #18 Added breadcrumbs will take away from the angel's pillow tenderness that true malfatti boast.
  • Step #19 Continue on with shaping the little balls.
  • Step #20 Lightly dust each dumpling with the flour & set aside on a cookie sheet, being careful to use the smallest amount of flour for each dumpling.
  • Step #21 Boil 10 c of salted water In a large-ish pot.
  • Step #22 When the water is boiling, turn down the heat so you get a nice simmer.
  • Step #23 Drop the malfatti into the water one at a time, making sure that you don't crowd them in the pot.
  • Step #24 As the dumplings rise to the surface, carefully pull them out using a strainer spoon & place this In a large-ish bowl.
  • Step #25 After all the malfatti are in the bowl, sprinkle on the butter & plate.
  • Step #26 Serve with a light tomato cream sauce & a good dusting of the best parmesan cheese you can find.
