Super Bowl (or Any Day) Chocolate Cupcakes W/cabernet Recipe

Ingredients
  • 2 c whipped cream (lightly sweetened) .
  • 1/2 c dried cherries (sliced) .
  • 1/2 c unsweetened cocoa powder .
  • 1/2 c vegetable oil .
  • 1 tbsp cinnamon (optional) or cocoa powder (as garnish) (optional) .
  • 1/4 c dried cherries (sliced) .
  • 1/2 tsp baking powder .
  • 1 1/2 c all-purpose flour .
  • 1 tsp vanilla extract .
  • 1 tsp salt .
  • 2 eggs .
  • 1 tsp baking soda .
  • 1 c sugar .
  • 3/4 c cabernet sauvignon wine .
  • 1 tsp cinnamon

Directions
  • Step #1 Preheat oven to 350°F & prepare muffin pans w/paper baking c.
  • Step #2 Into the lrg bowl of an electric mixer, baking soda, sugar, baking powder, salt, sift together the flour, cinnamon & cocoa powder.
  • Step #3 Add oil, vanilla, eggs & wine.
  • Step #4 Beat w/the electric mixer at lowish speed for 30 seconds.
  • Step #5 Turn the mixer speed to high & cont beating for 3 min, scraping the sides occ.
  • Step #6 Remove the bowl from the mixer & stir in the the dried cherries.
  • Step #7 Pour the batter into the prepared muffin pans & bake for 20 min or till a toothpick inserted comes out clean.
  • Step #8 To Serve: Spoon a dollop of whipped cream on the center of the completely cooled ccakes.
  • Step #9 Add 5-6 bits of dried fruit & a dusting of cinnamon or cocoa powder.
  • Step #10 NOTE: IMHO dried cranberries may well be a good sub for the dried cherries.
