Step #1 Put coconut, chilli, coriander,cumin, turmeric & garam masala into a mixer with the water.
Step #2 Blend to a paste.
Step #3 Whisk the eggs & add the onion, green chillies, pepper & coriander leaves.
Step #4 Mix well.
Step #5 Heat the oil in a frying pan & make a thin omelet with the egg mixture.
Step #6 Remove from pan & allow this to cool.
Step #7 Cut the omelet into 1" wide strips, roll the strips up into individual rolls.
Step #8 Fry the onions in a little oil till golden brown, do not allow the paste to stick to the pan, add the spice paste & cook for 3 mins, add a little oil or water if the paste starts to stick.
Step #9 Add the green chillies & tomatoes, cook for 5 mins Add the vinegar, salt & 3 c of water simmer for 10 mins Add the coriander leaves & omelet rolls & cook over low heat/flame 3 mins.
