Chinese Chicken Pies Recipe

Ingredients
  • 1 egg, beaten .
  • 1/2 c frozen peas .
  • 2 sheets frozen puff pastry, thawed .
  • 1/8 tsp five-spice powder .
  • 150 ml thickened cream .
  • 80 g ham, thickly sliced & sliced .
  • 1 tbsp plain flour .
  • 25 g butter .
  • 2 tsps gingerroot, grated .
  • 1 small leek, white part only, finely sliced .
  • 8 shiitake mushrooms, sliced .
  • 1 tbsp sesame seeds .
  • 300F ml chicken stock .
  • 1 tbsp coriander, sliced .
  • 2 c cooked chicken, sliced

Directions
  • Step #1 Preheat oven to 180C & grease 4 individual pie dishes.
  • Step #2 Place the butter in a saucepan over med-heat/flame.
  • Step #3 Add the leek & cook, stirring, for 5 mins or until softened.
  • Step #4 Add the mushrooms & ginger & cook for a further min.
  • Step #5 Stir in the flour, then slowly add the stock.
  • Step #6 Reduce the heat to low & cook, stirring, for 1-2 mins until the sauce has thickened.
  • Step #7 Stir in the frozen peas, cooked chicken, ham & coriander.
  • Step #8 Spice up with salt, pepper & five spice powder.
  • Step #9 Stir in the cream, then remove this from the heat & allow this to cool while you prepare the pastry.
  • Step #10 Cut each pastry sheet into 4 squares.
  • Step #11 Line each pie tin with one square, pressing well to the sides.
  • Step #12 Divide the filling among the pie cases.
  • Step #13 Brush the tops of the pies with beaten egg, then sprinkle with sesame seeds.
  • Step #14 Place pie dishes on a tray in the oven & bake for 20 mins or until the pastry is golden & puffed.
