Louisiana Chicken Jambalaya Recipe

Ingredients
  • 3 c rice (cooked) .
  • 1/2 c sliced fresh parsley .
  • 1/2 lb ground lean pork or sausage .
  • 1/2 tsp pepper .
  • 1 1/4 onions, minced .
  • 1/2 lb ground beef .
  • 6 tbsps vegetable oil or bacon drippings .
  • 4 garlic cloves, minced .
  • 1 c sliced celery .
  • 2 tsps salt .
  • 1/3 tsp cayenne pepper .
  • 1 c water (cold) .
  • 1 tsp tomato paste .
  • 1 1/2 lbs ground chicken giblets

Directions
  • Step #1 In a heavy iron pot, heat the oil over medium high heat.
  • Step #2 Add onions, & tomato paste, celery, garlic, & saute until onions are wilted.
  • Step #3 Stir in meat & seasonings.
  • Step #4 Cook until meat begins to brown, stirring often so it doesn't stick.
  • Step #5 Add water, & cook over med-heat/flame for about 40 mins, stirring often.
  • Step #6 Sprinkle top with parsley & let simmer over low heat/flame, uncovered, for 15 mins.
  • Step #7 Mix in cooked rice, & serve.
