Potato Pan Rolls Recipe

Ingredients
  • 3 tbsps sugar .
  • 3 tbsps butter or margarine .
  • extra all-purpose flour .
  • 2 (1/4 oz) packages fast rise yeast .
  • 1 1/2 tsps salt .
  • 1 1/4 c water .
  • 4 1/2-5 c all-purpose flour .
  • 1/2 c mashed potatoes (prepared without milk or butter)

Directions
  • Step #1 In mixing bowl, mix 2 c flour, sugar, yeast & salt.
  • Step #2 In saucepan, heat water & butter to 120*-130*.
  • Step #3 Add to dry ingredients; beat until smooth.
  • Step #4 Stir in mashed potatoes & enough remaining flour to form a soft dough.
  • Step #5 Turn onto floured surface & knead until smooth & elastic (about 6-8 mins).
  • Step #6 Cover up & let rest for 10 mins.
  • Step #7 Divide into 16 pieces & shape each into a ball.
  • Step #8 Place in two greased 8 or 9 inch baking pans.
  • Step #9 Cover up & let rise in a warm place until doubled, about an hr.
  • Step #10 Sprinkle top with extra flour (optional).
  • Step #11 Bake at 400* for 18-22 mins or until golden brown.
  • Step #12 Remove from pans to wire racks to cool.
