Chicken And Dumplings Recipe

Ingredients
  • 1 tsp baking powder
  • 1 c hot chicken broth
  • 1 egg
  • 1 (2 to 3 lb) whole chicken
  • 2 c all-purpose flour

Directions
  • Step #1 In a large stockpot or Dutch oven cover the chicken with salted water & let simmer until cooked through.
  • Step #2 When tender, remove chicken from pot.
  • Step #3 Remove meat from bones & keep warm while making the dumplings.
  • Step #4 TO MAKE DUMPLINGS: Sift about 2 c of flour & 1 tsp baking powder into a large mixing bowl.
  • Step #5 Make a well in the flour/powder mixture; pour in 1 c of hot chicken broth, mixing first with a fork, then with your fingers.
  • Step #6 Add the egg & mix well again.
  • Step #7 Knead the dough for a few seconds on a floured board.
  • Step #8 Separate the dough into 4 or 5 parts & roll as thin as possible.
  • Step #9 Cut into 1 1/2 or 2 inch wide pieces.
  • Step #10 Break these into 2 inch long strips.
  • Step #11 Drop into boiling chicken broth & let simmer for 10 to 15 mins.
  • Step #12 Serve with previously prepared meat.
