Moroccan Tuna Kebabs With Couscous Recipe

Ingredients
  • 100 g couscous .
  • 2 lemons .
  • 200 ml vegetable stock .
  • 1 tsp ground cumin .
  • 3 tbsps fresh mint, sliced .
  • 2 tbsps harissa .
  • 2 tuna steaks, cut into large chunks

Directions
  • Step #1 Toss the tuna with the harissa & 1 Tbsp lemon juice & leave to marinate for 10 mins.
  • Step #2 Add the cumin to the vegetable stock & pour over the couscous.
  • Step #3 Cover up, leave for 5 mins, then fluff with a fork.
  • Step #4 Thread the tuna on 4 skewers & grill/broil for a min on each side.
  • Step #5 Mix the rest of the juice from the first lemon with the mint & couscous.
  • Step #6 Cut the second lemon into wedges & serve this with the tuna kebabs & couscous.
