Apple Walnut Muffins Low Fat & Low Sugar Version Recipe

Ingredients
  • Topping .
  • 1 c cooking apples, grated, unpeeled (Rome, Jonagold, Granny Smith) .
  • 1 c low-fat buttermilk .
  • 1/3 c Splenda granular .
  • 1/2 tsp baking soda .
  • 1 1/2 tsps baking powder .
  • 1/2 c all-purpose flour .
  • 3 tbsps walnuts, sliced .
  • 1/2 tsp salt .
  • 1 egg .
  • 1 tbsp walnuts, sliced .
  • 1 tbsp rolled oats .
  • 2 tbsps light olive oil .
  • 3/4 c rolled oats, not quick cooking .
  • 2 tbsps apple butter (see Sugar Free Crock Pot Apple Butter) .
  • 1 tsp cinnamon .
  • 1/2 c whole wheat pastry flour .
  • 1 tbsp brown sugar

Directions
  • Step #1 Heat oven to 400ºF.
  • Step #2 Grease 12 muffin tin c or line with ccake papers.
  • Step #3 In a large bowl, cinnamon, oats, salt, whisk together the flours, baking powder & soda, Splenda & walnuts.
  • Step #4 Thoroughly mix the egg, apple butter, buttermilk, oil & grated apple.
  • Step #5 Pour into dry ingredients & stir carefully just till mixed.
  • Step #6 A few lumps are OK; overmixing will make the muffins tough.
  • Step #7 Divide the batter among the prepared muffin c.
  • Step #8 Combine topping ingredients & scatter over muffin tops.
  • Step #9 Bake for 20 mins or until a toothpick inserted in the center comes out clean.
  • Step #10 (They don't rise very much; that's okay.
  • Step #11 ).
  • Step #12 Remove from oven & cool on a rack (if you're "muffin tipper", now's the time to do it ;-) for 10 mins.
  • Step #13 Remove from pan & finish cooling on rack.
