Dad's Down Home Cornbread And Jalapeno Meatloaf Recipe

Ingredients
  • 3/4 c canned whole kernel corn
  • 1/4 c milk
  • 3 fresh jalapeno peppers, seeded & minced
  • 1 egg, lightly beaten
  • 1/2 c finely sliced onion
  • 1/2 lb ground pork
  • 1/2 c shredded pepperjack cheese
  • 1 1/2 lbs ground beef
  • 1 tsp freshly ground black pepper
  • 1/2 c sour cream
  • 1/2 c crumbled cornbread
  • 2 cloves garlic, minced
  • 1 tsp kosher salt

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Lightly grease a medium baking dish.
  • Step #3 Mix the ground beef & ground pork in a large bowl.
  • Step #4 In a separate bowl, garlic, sour cream, cornbread, kosher salt, jalapeno peppers, mix the corn, onion, milk, pepperjack cheese, egg, & pepper.
  • Step #5 Gently mix the corn mixture into the meat mixture.
  • Step #6 Form into a rounded loaf shape, & place this in the prepared baking dish Bake 1 hr in the preheated oven, to a minimum internal temperature of 160 degrees F (70 degrees C).
  • Step #7 Loosely cover with aluminum foil during the last 15 mins of cook time if the loaf is overly brown.
