Ingredients
1 red bell pepper, seeded & sliced .
1/4 c butter .
1 pinch cayenne pepper (optional) or hot sauce (optional) or Tabasco sauce (optional) .
3/4 c shredded mozzarella cheese .
1/2 tsp seasoning salt (or use white salt to taste) .
8 large eggs .
7 green onions, sliced .
1 1/2 c shredded cheddar cheese .
1 3/4 c half-and-half cream or milk .
black pepper .
3 c finely choppped cooked ham (can use less) .
1/4 c flour .
1 c shredded cheddar cheese or mozzarella cheese or parmesan cheese .
3/4 lb sliced fresh mushrooms (can use less)
Directions
Step #1 Grease a 13 x 9-inch baking dish.
Step #2 In a bowl mix together 1-1/2 c shredded cheddar with 3/4 c shredded mozzarella cheese then sprinkle evenly into the bottom of the baking dish.
Step #3 In a large skillet melt butter oven medium heat; add in sliced mushrooms & cook this until they release there moisture (about 10 mins).
Step #4 Add in green onions & red bell pepper; saute for 3 mins.
Step #5 Spoon the mushroom mixture over the cheese, then sprinkle the sliced ham over the mushroom mixture.
Step #6 In a bowl whisk together flour, eggs, salt, pepper & cayenne (if using) until thoroughly mixed; pour evenly over the ham.
Step #7 Cover up & put in the fridge for 8-24 hrs.
Step #8 Remove from fridge 30 mins before baking.
Step #9 Set oven to 350 degrees.
Step #10 Bake for 35-40 mins.
Step #11 Top with 1 c chedar cheese (or to taste) & return to oven for 2-3 mins or until the cheese melts.
