Tuna Rice Cakes Recipe

Ingredients
  • 6 tsps vegetable oil (for frying) .
  • 1/2 c basmati rice, cooked .
  • 6 tsps flat leaf parsley, finely sliced .
  • 1 pinch curry powder .
  • 425F g tuna, drained & flaked .
  • 2 eggs, beaten lightly .
  • 1/2 lemon, juice of .
  • 1 onion, finely sliced

Directions
  • Step #1 Combine rice, curry powder, tuna, lemon juice, onion, eggs & parsley In a large-ish bowl.
  • Step #2 Mix with hands & shape to form patties.
  • Step #3 Fry in oil on each side until golden.
  • Step #4 Drain on paper towel.
  • Step #5 Serve with a salad or cut-up raw vegetables.
