Super-easy Vegan Double Chocolate Cookies Recipe

Ingredients
  • 3 tsps vegan Ener-G Egg Substitute .
  • 1 1/2 c semisweet vegan chocolate chips .
  • 1/2 c sliced pecans (optional) .
  • 1/2 c vegan margarine (I used Earth Balance Buttery Sticks) .
  • 1 tsp vanilla extract .
  • 1 (18 1/4 oz) box devil's food cake mix (I use Duncan Hines) .
  • 4 tbsps water .
  • 1/4 c firmly packed brown sugar

Directions
  • Step #1 Preheat oven to 350.
  • Step #2 Line a cookie sheet with parchment.
  • Step #3 In a mixer, stir up the cake mix to break up lumps.
  • Step #4 Melt margarine in the microwave.
  • Step #5 In a mixer, place the brown sugar, egg replacer & water, melted margarine, vanilla, pulse to mix thoroughly.
  • Step #6 Stir into the cake mix until incorporated.
  • Step #7 Stir in chocolate chips & nuts.
  • Step #8 Drop by tbspfuls onto cookie sheet, & bake for 10-12 mins.
  • Step #9 They will flatten & get a crinkly look on the top.
  • Step #10 Let cool for 3 mins on cookie sheet, then transfer to a cooling rack to cool completely.
